Carbo Loading at Home: Pasta Salad

You don’t always have to go and eat out to have your Carbo Loading party. You can just invite your friends and cook at home.

Here is a healthy pasta recipe that I invented while rummaging the contents of our fridge.

Pasta Salad

1 zucchini slice thinly into half moons
2 eggplant slice thinly into half moons
1 Can crushed or diced tomatoes
1 tbsp sundried tomatoes
1/4 cup sliced black olives
1 can asparagus (or 1-2 heads of broccoli chopped and blanched)
1 head of garlic minced
1 red onion finely chopped
1 lemon
1 and 1/2 cup  chopped Cilantro
1 pc dried chilli finely chopped
(for non vegetarians you can add anchovies)
500g Tortellini pasta

Cook pasta until aldente and set aside
Heat olive oil in a sauce pan
Saute onions and garlic
Add Chilli
Add sun dried tomatoes
Add in zucchini and eggplant
Season with salt and pepper
When eggplant and zucchini are cooked
Add the olives.
Mix in pasta noodles and add finely chopped cilantro
Squeeze in lemon before serving

Best served with your choice of grilled or fried protein.
